On April 21st, 2025, something remarkable happened.
That morning, my old friend Sam shared with me a story that left me speechless. It had been more than three decades since his first trip to Thailand, but what he revealed still carried the power to stop time. He spoke of a monk, a miracle, and a moment that would change the direction of his life forever.
This is the story of "The White Thai."A FAMILY'S
Over 35 years ago, following a heartbreaking family tragedy, Sam and his parents travelled to Thailand. They were seeking peace, and unknowingly, something much more. At a temple in the northeastern region of Korat, surrounded by thousands, a revered monk named Luang Por Khun walked straight past the crowd and stopped in front of Sam.
He took Sam by the arm, looked deep into his eyes, and softly said in Thai:
"ยินดีต้อนรับกลับบ้าน (Welcome home)."
Sam had never spoken Thai before. But something shifted. In that moment, he began to understand the language—and reply. It was as if a light had been turned on inside him. A short time later, the monk invited him to his private room. What was said in that sacred space is still being recalled and written down today, but that single encounter sparked something extraordinary.
I
After spending six days at the monastery, Sam set out on a three-month motorbike pilgrimage through nearly 40 provinces of Thailand. He travelled alone, exploring temples, tasting local dishes, and learning directly from villagers, monks, and families across the north and northeast.
From misty mountaintops in Mae Hong Son to the Mekong Riverbanks in Nong Khai, he immersed himself in Thai culture, spirituality, and cuisine. That journey—deeply personal, raw, and real—laid the foundation for everything that came next.

Upon returning to Australia, Sam brought the spirit of Thailand with him. He launched a series of successful Thai restaurants, trained staff in authentic cooking, and kept the flame of that first miracle burning.
Decades later, we’re telling his story—through:
